BUDGET: Food/servers/rentals, 55 percent; invitations, 35 percent; wine contributed by Chef Ming Tsai; photographer, 5 percent; and miscellaneous, 5 percent. Entertainment was at no cost by partners Chef Ming Tsai and Breitling watch technician Peter Purtschert. (Long’s would typically include entertainment at most events, either live music or performance.)

RESULTS: A wonderful evening and fabulous energy filling the store with over 300 guests.
